Salmon in Puff Pastry

Inspired by some of the cookbooks and books I have been reading about families cooking together, I had my big kid make dinner last night. He liked making it more than he liked eating it, but the grown-ups in the house were happy!


 

Ingredients:
 
1 pound salmon ( 4 fillets - skin removed)
1 package Boursin cheese
1 cup packed fresh spinach
1 package puff pastry
1 egg
 


 
Layer spinach, salmon, then cheese on center puff pastry
 

 
We used more puff pastry then needed because we were too lazy to let it thaw enough to use less
 

 
Crimp the edges of the puff pastry with a fork, poke a few holes in the top and brush with egg wash
 

 
On a baking sheet lined with parchment paper bake at 375 for 20-25 minutes
 

 

 
Next time I might add mustard or maybe a little pesto
