Grilled Pizza

Pizza and grilling: two of my favorite things. It seems like an unlikely paring, but this month's article is devoted to my new summer favorite, grilled pizza. Homemade pizza is always a treat. Typically made in a hot oven on a stone, oven baked pizza comes out much like a traditional pizza as many of us know it. Grilled pizza is a truly different experience.
 
Pizza prepared on the BBQ yields a thin crust and grills up rather quickly. The end result is a rustic chewy-crispy crust peppered with grill marks. For this recipe, you can use a standard pizza dough, store bought or homemade, according to your timeframe and preference.
 
In regard to toppings, the possibilities are endless. Grilled veggies, chicken, fresh herbs, arugula, spinach, tomatoes – it's all delicious on a grilled pizza. Feel free to use what you have available; improvising can sometimes yield a masterpiece. Prep all your toppings ahead of time and have them on hand at grill-time, as it all comes together in a few quick steps over the BBQ. I made a tomato, basil Margarita pizza, and a grilled eggplant & sundried tomato pie (recipes below). Some other great combinations are:
 
Mexican pizza – thin layer of salsa topped with sharp cheddar cheese, grilled chicken, sautéed peppers & onions, topped with fresh cilantro (serve with a dollop of sour cream)
 
BBQ Chicken – BBQ sauce, combo of mozzarella and Gouda cheeses, topped with chunks of BBQ chicken, thinly sliced red onion and a sprinkle of fresh cilantro
 
Grilled Veggie – (great on a whole wheat crust) – garlic olive oil topped with grilled veggies, a sprinkle of feta, olives, and a sprinkle of fresh herbs
 
So happy summer to all, and when you find yourself bored with burgers, why not give grilled pizza a try. Enjoy!
 

Grilled Pizza (makes 2 thin 10" pizzas)
 
Ingredients
 
16 oz pizza dough divided in 2
1/2 cup flour
1/2 cup olive oil
4 cloves of minced garlic
2 tsp Italian seasoning
Salt & pepper
Grill Cooking Spray
 
Margarita Pizza - in addition to above ingredients you will need:
4 oz thinly sliced fresh mozzarella cheese
2 medium tomatoes sliced
2 TBSP coarsely chopped basil leaves
 
Grilled Eggplant & Sundried Tomato Pizza – in addition to above ingredients you will need:
1/2 cup grilled eggplant
1/3 cup crumbled feta cheese
1/4 cup sliced olives
2 TBSP coarsely chopped fresh oregano
2 TBSP sliced sundried tomatoes in oil - drained
 
Combine olive oil, garlic and seasoning – set aside Roll well-floured dough to thin 10-12 rounds.
 


 
 
Prepare your toppings.
 

 
 

Prepare grill with grill cooking spray and heat to Med-High. Place dough on grill, do not worry about perfection, the end result is a rustic type pie rather than an exact round circle. While dough begins to cook, coat top-side with olive oil mixture. Close lid, and after approximately 3 minutes (more or less depending on your grill) the underside of the dough will brown. Flip pizza using pizza peel or 2 spatulas.
 


 
 

Brush topside with olive oil mixture, and top with mozzarella cheese, tomato and basil. Close lid and allow pizza to cook several more minutes until dough is browned and cheese is melted. Remove from grill onto cooling rack and season with salt and pepper.
 


 
 

Eggplant & Sundried Tomato Pizza
 


 
 

Repeat steps above, when it comes time for toppings, top with eggplant, sundried tomatoes, olives, feta and finally oregano. Close lid for several more minutes to allow to cook completely. Remove from grill and season with salt and pepper.
