Bruschetta Chicken

As summer winds down, it's time to enjoy the last of the garden fresh produce. This easy bruschetta chicken dish celebrates the last hurrah of summer with juicy garden tomatoes and fresh fragrant basil. Simple enough for a weekday dinner, yet elegant and flavorful. Chicken can be served on a bed of rice, pasta, quinoa or even a plate of fresh greens for a hearty summer salad. Enjoy!
 


 
Heirloom tomatoes from the PCC garden
 

Bruschetta Chicken (serves 4) 4 boneless, skinless chicken breasts
 
Chicken Marinade
1/4 cup olive oil
1/4 cup white wine vinegar
3 cloves of garlic sliced
2 tsp fresh thyme
Dash of salt & pepper
 
Tomato Topping
4 large fresh tomatoes
1/4 cup chopped fresh basil
1 tsp olive oil
1 tsp balsamic vinegar
1 clove garlic - minced
Salt & pepper
 
Wisk together marinade ingredients in large bowl. Add chicken and refrigerate one hour.
 
Coarsely chop tomatoes, place in bowl and add basil, olive oil, vinegar, garlic, and salt and pepper to taste. Heat grill to medium high. Remove chicken and discard marinade. Grill chicken 8-10 minutes each side or until done (165 degrees).
 
Place chicken on a bed of rice, quinoa, pasta or fresh greens. Top with tomato mixture. Enjoy!
