Fresh Strawberry & Peanut Butter Bars

Peanut butter and jelly is simply a match made in heaven. Nothing like the saltiness of the peanuts paired with the sweetness of strawberries. This recipe takes this happy pairing into the realm of desserts. This dish has an elegant presentation, but is simple to prepare and takes full advantage of in season berries. It is a great dessert to bring along to a barbeque or picnic, and the bars can be cut into small bite sized pieces. The consistency of the bar is more like a cookie than cakelike. If you are looking for a true crowd pleaser for your next summer event or just a tasty treat to have on hand, look no further and enjoy!
 
Ingredients:
 
3/4 cup softened butter
3/4 cup creamy peanut butter
1 cup packed brown sugar
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla
2/14 cups all-purpose flour
1/2 cup strawberry jam (I used Smucker's fruit and honey variety)
4 cups sliced fresh strawberries
 
 
1. Heat oven to 350 degrees. Line a 13x9 inch baking pan with aluminum foil, extending the foil over the edges.
 
2. In a large mixing bowl beat together butter and peanut butter on medium until smooth and combined.
 


 

3. Beat in sugars, baking powder, and salt until combined.
 


 

4. Mix in eggs and vanilla.
 


 

5. Gradually add in flour, mix until combined. Mixture will have the consistency of cookie dough.
 


 

6. Spread dough into prepared pan and bake for 25 minutes or until lightly browned on top and it passes the toothpick test. Cool on wire rack.
 
7. Once cooled completely, remove from pan by lifting by the edges of the foil. Spread with jam, I used Smucker's strawberry fruit & honey spread.
 


 

8. Top with berries and serve. Refrigerate any unused portion.
